The Professor's French Stuffed Mussels

A Divine and Worthy Appetizer

I received an amazing birthday present one year in Perth, The Professor's Cooking Class, held over 6 weeks in Mt. Lawley. The Professor expanded and inspired my cooking to a whole new level.

This appetizer dish and the accompanying main/entrée meal is still one of my absolute favorites. Yes this dish takes more work, but the end product is worth every second of your effort and you will absolutely wow your guests. The trick is to prepare as much as you can in advance.

Hummus Deviled Eggs

Who doesn't love a good deviled egg

I always come home with an empty plate with this version of deviled eggs.

Blackened Shrimp Cucumber Avocado Bites

Deceptively Easy, Quick, and Delicious

Hummus Deviled Eggs

Honestly, I was surprised at how phenomenal this quick and easy appetizer was. Voted as one of the favorites of the night with my friends. I served it with remoulade sauce, the recipe I included on the recipe download.

For a different dinner party approach, I went with an appetizer-tapas style format, serving 2 new dishes every 20-25 minutes.

Collection of Caprese Style Appetizers & Pesto

Go To Appetizer for Easy

Not only are these appetizers delicious, fresh, and colorful, they are easy and pretty fail proof. You can up your game using a melon ball making tool. I'm yet to invest in one of these, maybe it'll be on the next shopping list.

I've also included an easy pesto recipe if you feel inclined to make your own. I adore pine nuts but I can hear my purse making pained sounds. Check out my blog on cheeses and Italian meats to expand your understanding of their differences and flavors.

Huey's Bacon Wrapped Stuffed Dates

Delightful Combination of Salty & Sweet

A simple question from my friend Jen, "How do get the bacon to not fall off?" had me curious as I had never cooked this appetizer before.

Question is hopefully answered for her and the side bonus of learning everything I didn't know I needed to learn about dates.

For an added element, serve with an aioli or remoulade sauce.

Ahi Poke Wonton Nachos

Colorful, Simple, Yet Tasty

I love reimagined recipe ideas and this recipe fits all the criteria for changing it up. A quick and easy appetizer that's colorful, healthy, and at the same time will impress guests, yet take the stress of creating an appetizer off you.

I like to use sushi grade Ahi Tuna, preferably Yellowtail. I didn't have the black sesame seeds when I made this, but highly recommend as it adds great color contrast. My recipe also offers other ideas on how to change it up in ingredients or presentation.

First time using Wonton wrappers like me? You can find them in the fridge section of your local supermarket.

Sharynne's Aussie Sausage Rolls

Not Just For Aussies

Over the past few years I've been really making this recipe my own, tweaking it to take it to the next level. Well now it's ready to share and it's super easy. The only vegetables I add is onion and celery, and combined with garlic adds sweetness, the sourdough breadcrumbs and Worcestershire sauce add the tang. I buy days old sourdough and put it in my food processor.

I often name a recipe after certain special people, and I choose the recipe based on whether it is a favorite of theirs. Sharynne was not only a special human being, loved, but now missed greatly and she loved my version of these rolls. She didn't want to recipe, instead she hit me up when she wanted them. So give a nod to the skies when enjoying these.
