Out of desperation this pumpkin pie recipe evolved. Libby's canned pumpkin is the go to, and when a shortage occurred, I couldn't not have pumpkin pie for my Aussie Thanksgiving, hence butternut pumpkin/squash version.
Every year I hosted 50+ people, US, Canadians, Aussies, and other internationals. All beautiful friends I have so many wonderful memories with. This recipe is named for them.

To switch things up for Thanksgiving dessert, I added this delightful dish to the menu. Wow! Now the wow factor came from the apples I used and Saigon cinnamon, which added a next level fragrance and slight spiciness. I went with vanilla ice-cream, but warm custard would be just as excellent. Seriously, it took me only 10 mins prep time and was very easy.
