A Guide to Cooking Red Meat
I am by no means any expert at cooking red meat, but I am getting better all the time. Key is knowing the weight of the meat, time to cook each side, and not doubting yourself.
Some people like to use a meat thermometer, but I don't as I find the meat is overcooked as it does not allow for resting time. I like to sear my meat, undercook it and finish it off in the oven.
