I love this recipe as it's a hit the easy button for me - Ready in 25 mins total from start to finish! Take note, prep everything in advance and the cooking process will be ridiculously smooth. Now, my recipe is different to most out there as I double ingredients to infuse the pasta with the liquid sauce. This takes the recipe to a whole new level.
I named this after Mike, a newer friend that we are really glad to add to our friend group and his sweet wife, Michelle. I often name the recipe after someone who really loved the recipe and allowed me to share my joy of cooking.

Chilean Sea Bass with Pesto Tomato Sauce & Pearl Cous Cous
Another fast & fabulously tasty meal!
I think this one is even a dinner party solid go-to. Sea Bass could be switched out for Cod, Barramundi, Halibut or Dhu fish. I cannot emphasize enough how this recipe is such a change up to the meat and potatoes type dishes. Incredible and low fat!
A better photo is coming as this is another dish I do and doesn't show the pesto tomato sauce accurately or kale in the cous cous.. Unfortunately, when you plate, take the photo and don't realize until later that your camera fogged up.
