Balsamic Roasted Chicken with Thyme Cous Cous
Ready to Serve in 30 Minutes
It's been a while since I've cooked this recipe as my girls were not fans of cous cous. Now that I am an empty nester, it was high time I put this fabulous dish back in rotation.
I do recommend marinating the chicken the day before, or even early the same day for plump, moisture rich chicken. The thyme and garlic cous cous is light and fragrant.
I like to serve this with roasted root vegetables, even adding in red onion and zucchini. If you have an air fryer, this would speed things up even more.

Deliciously Easy Chicken Dish
Flavorsome but wonderfully easy. This is the dish to knock the socks of your family or guests or if starting out expanding your culinary capabilities. Served with Roasted baby potatoes, charred Brussel sprouts and sautéed asparagus. I'll add a better picture soon as this one doesn't exactly make it look appetizing!
I recently starting using an air fryer for my potatoes, Brussel sprouts and asparagus and have been thrilled with the results. I like to boil the potatoes first, then finish in the air fryer.

I've never tried to record this recipe on paper before as it's one of those recipes that constantly evolves and made with intuition. Latest additions of sour cream and Boursin garlic and herbs cheese gave this a wow factor.
I miss the puff pastry in Australia and can't fathom why it is so expensive here in Colorado. For the best pastry results, I like Trader Joes brand. While I love cooking, making my own doesn't really float my boat. For the Boursin cheese, it's more affordable from Costco or Sam's Club.

Italian Panko Crusted Chicken

I had heard about using mayonnaise in crusted chicken recipes and for some reason I was adverse to trying it until now. Well, let me tell you, I'm an absolute convert now. The mayonnaise locks in the juices and the flavor is next level awesome. If you don't like mayo, rest assured, you won't notice. I use egg mayonnaise, which I like for its savoryness. Not a word - I know!
Even better is the versatility of this dish. It works for a quick mid-week dinner or an easy dinner party worthy option. What I also love is how you can change up the herbs in so many ways.
Perfect Roast Turkey

I started cooking turkey in a bag a number of years ago, and have never looked back. It perfectly locks in the flavor, the cooking time is easier to perfect, and it's sumptuously juicy.
I like to brine my turkey the day before for an even better result. I'll add that recipe in the coming week.

Thai Coconut Curry Chicken Meatballs
30 minute Fabulous Dish
I recently expanded my cooking repertoire to Thai and Vietnamese. This dish is wonderfully easy to make, gluten free, and definitely takes only 30 minutes. I usually make double the ground chicken/turkey portion of the recipe, and freeze half to cut my cooking time even further when I make this again.
If you think coconut milk would not be your thing, this is still the recipe for you as the coconut flavor is extremely mild.

Thai Yellow Chicken Curry
My New Favorite!
I know there are quite a few chicken curries here, but this one now tops the list of my favorites. Even my picky daughter didn't expect to like it and she took home leftovers.
Key is the Thai yellow paste which I sourced from a great Asian market here in Denver. On another note, I will share, that my Zojirushi rice cooker has been the best investment. Felt pricy at the time, but it is one of my favorite appliances for perfectly cooked rice. Set and forget.
