Sicilian Seared Swordfish Steaks with Salmoriglio

This refreshingly quick but dinner party worthy dish is rock star status. Paired with the Baked Tomato Stuffed with Rice, Pine Nuts, and Kefalotiri Cheese, it will have your guests feeling like they are in a restaurant.

A recipe I made up, and had to make again last week to figure out the ingredients amounts. Then I forget halfway through to keep track. I've done my best to capture through memory and will refine the recipe in future but it's pretty darn close.

I first had this dish at The Yardhouse, a restaurant here in Colorado and enjoyed a glass of Wairau Sauvignon Blanc from New Zealand. I loved the meal so m hunted down the recipe. Serve it with Wasabi Mashed Potatoes.

Ridiculously Good and Too Easy

First, not my picture but I did buy a picture close to the actual and will post an original soon. These barely made it onto the counter before the plate loading began and no time for a staging photo.

I made a double batch, enough for all to take home several each. If only I could show you all the next day photos of them enjoying them. It made my heart sing. The lump crab I found at Costco but I'm sure you can find it elsewhere. Get yourself some Old Bay seasoning or make your own. So worth it and can be used in many recipes. 

White Wine, Garlic & Tomato Mussels

If you love mussels, a no brainer!

I love mussels and fresh bread, especially garlic bread. I typically research a lot of recipes, then create a recipe that is an amalgamation of what I think would taste good. This one is all me.  I created it from scratch and the recipients were impressed so this is a keeper.

Amazing Dinner in 20 minutes or less

You might look at all these recipes and be overwhelmed, which I completely get! Honestly, I am a very time poor individual. I am at my desk by 7 am, barely take a break (trying to be better!) and don't get home until 6 pm ish. I love to cook, but getting home and thinking about cooking can be last on my list of ideal things. So, I am constantly looking for recipes that have a 30 minutes and under timeline and this one not only meets that criteria, but is under 20 minutes and incredibly delish.

Do yourself a favor and add this to your monthly menu. Key is to have all the ingredients on hand. Only buy the fish 1-2 days prior. I typically buy on a Saturday or Sunday with a plan to cook on the Monday, no later than Tuesday.
