Perfect Fall-Winter Soup

Every Thanksgiving and Christmas I find myself making this gratifying soup using leftover ham. With thyme, navy beans, tomatoes, potatoes, celery, and carrots. More recently, this has been a go to camping meal that is constantly requested by our fellow camping friends.

Each season I like to hold a lunch with my volleyball girlfriends that offers a variety of the same types dishes such as soup. For the last event, I showcased 3 soups, Columbian Chicken Soup, Shrimp & Chorizo Soup, and a fabulous version of my Butternut Squash Soup. All served with a variety of breads and seasoned toasts, and first course of salads.

This recipe is a no brainer when it comes to pulling together something for the family or unexpected guests dropping by. I keep most of these ingredients on hand in my freezer each month for that very reason.

White Bean, Corn & Chicken Chili

A Favorite for Everyone

A much requested dish by our camping friends and a great go to on a fall or wintery night. Ready in less than 30 minutes. If using a slow cooker, then I recommend using whole chicken breasts.

For those that like it hotter, since this is so mild, just ramp up the heat with hotter chilis and add more chili powder.

Hearty Smokey Sausage, Potato & Kale Soup

A Winner Every Single Time!

This is a favorite in our house. Perfect for a fall or winter night, warming the tummy with the smokey and slightly spicy kick of the andouille sausage. One of those soups that tastes better the next day and great for freezing and taking on camping trips!
