Italian Roasted Herb & Garlic Eggplant

Roasting or barbequing eggplants, also know as Guinea Squash, will produce a sweet, smoky flavor. There are endless possibilities for the preparation of eggplants. Available all-year round, but peaking in the summer, when choosing an eggplant, it should give a little when pressed gently. The stem should be green, eggplant shiny and smooth, with no hard spot. Avoid storing in the fridge as that damages the eggplant texture.
